We are ‘Dippy’ people.  Whenever I entertain, dips are always involved. I put out a platter of a few dips with some crispy pita chips and watch everyone hover over the platter.

This roasted eggplant dip is a game changer that I’ve been making for over 20 years. Inspired by the queen 👑 inagarten 
It’s excellent on its own with crackers or pitas, spoon some into a pot of soup. Use it as a spread on a sandwich, spoon some into some scrambled eggs, or top a piece of roasted fish with some.  It’s so versatile and so delicious.

Roasted Eggplant Dip 
.

1 medium eggplant, peeled (I like to leave a little peel on for texture)
2 red bell peppers, seeded
1 red onion, peeled
4 garlic cloves peeled 
3 tbls extra virgin olive oil
1 1/2 tsp kosher salt
1/2 tsp freshly ground black pepper
3 tbls tomato paste

Preheat the oven to 400F.
Cut the eggplant, peppers and onion into 1” cubes. Toss them in a large bowl with the garlic, olive oil, salt, and pepper. Spread them on a baking sheet. Roast for 40-45 minutes or until the vegetables are lightly browned and soft, tossing once during cooking.
Cool slightly.
Place the vegetables in a food processor and add the tomato paste. Pulse to blend it all together. You want chunky. Taste for salt and pepper.  Serve with pita chips

Pitas:

Get 5 pitas and using scissors, cut into wedges. Arrange the pita wedges on a large baking sheet. Drizzle with some olive oil, sprinkle with dried oregano, salt and pepper to taste.  Toss to coat and spread out the wedges evenly on a parchment lined baking sheet. Bake for 8 to 12 minutes, or until toasted and golden in color.
