I saw leilakocht make this viral zucchini wrap and I was so intrigued I knew I had to make it immediately. Basically instead of using a wrap we baked 1 layer of thinly sliced zucchini rounds with a melted layer of mozzarella cheese on top.  This brilliant concoction makes up the ‘bread’ of the sandwich.  I filled mine with pesto, burrata, tomatoes, balsamic glaze and arugula but the sky is the limit on what you can fill them with. 
Im obsessed and I cannot wait to try a new version tomorrow!

Viral Zucchini Wrap

Preheat oven to 350F. Using a mandolin or a sharp knife, slice a zucchini thin. Arrange on a parchment lined baking sheet in a rectangle, being careful to make sure the ends of each circle are touching. Season with salt and pepper and drizzle with oil.  Sprinkle with 1/2 cup shredded mozzarella . Bake for 25 minutes or until the cheese is golden. 
Remove from oven. Invert it and flit it over.  Fill it with whatever you want!
