In my case opinion, when it comes to easy weeknight meals, nothing beats a simple baked salmon dish with a really fabulous sauce  Combine the glaze ingredients together, pour over the fish and bake. Serve with rice or mashed sweet potatoes and a side of broccoli and you have my idea of a perfect dinner that really didn’t take much time at all and will make everyone want to go back for seconds.

Sweet and Spicy Glazed Baled Salmon

4 salmon fillets
2 cloves garlic, grated 
1 tbls ginger, grated 
1/4 cup soy sauce
1/4 cup plus one tbls sweet Thai chili sauce
2 tbls sesame oil
1 or 2 tbsp chili crunch, depending on on how spicy you want it 
Juice of one lime 
Sesame seeds and chopped scallions to garnish 

Preheat oven to 400F. 
In a bowl, combine garlic, ginger, sesame oil, sweet Thai chili sauce, chili crunch and lime juice.  Stir till combined. 
Place the salmon in a baking dish and pour sauce over making sure it’s evenly coated.  Let marinate for 20 minutes. 

Bake for 15-20 minutes, depending on the thickness of your fillets and you preference of cooking time, until the salmon is cooked through and flakes easily with a fork. Remove from oven and baste the fish with a bit of sauce. Top with sesame seeds and scallions.
