I had some super ripe bananas that were begging to be used and instead of baking some bananas bread or muffins, I decided to bake a tray of bananas bars and frost them with a thick layer of chocolate icing.  Oh my, that was a great idea!

Chocolate Frosted Banana Bars 
.
1 cup brown butter (melted)
2 cup light brown sugar 
2 eggs
2 tsp vanilla
1/2 tsp  salt
2 cups all purpose  flour
1 cup mashed banana 

Preheat oven to 350F. Grease a 13x9” pan or line it with parchment. Set aside. Combine the flour with the salt and set aside. 
In a pot, melt butter and continue cooking. Once it’s melted, swirl the butter in the pot until butter reaches a deep golden brown color. Pour the butter into the bowl of a stand mixer.  Let it cool for a few minutes before adding the brown sugar and vanilla and mix well.  Add the eggs and banana and mix until smooth and finally the add the flour mixture. Spread into the pan.
Bake for 30 minutes, or until the center is set.
When the brownies cool, frost with the chocolate icing 

Chocolate Frosting:
1 cup butter, softened 
1 cup unsweetened cocoa powder
6 cups powdered sugar
1 tsp vanilla extract
1/3 cup warm water 

In the bowl of a stand mixer add the butter, cocoa powder, sugar, vanilla, and warm water and mix until the mixture is smooth and creamy.  If you want it a bit looser, add in more warm water by the tbls until you get the consistency  you want.
