## Caption

This is my favorite type of salad to enjoy in the warm summer months.  Chock full of delicious greens, fresh fruit  and preferably a vinaigrette with berries as the star of the show.  It adds a freshness and natural sweetness to the salad that can’t be beat.  Not to mention, the salad is as beautiful as it is delicious. 

This salad combines lettuce, littleleaffarms  greens only for me, peaches, cucumber, toasted almonds, warm panko coated goat cheese balls, pearl couscous and raspberry vinaigrette

Fresh Raspberry Vinaigrette 
(This dressing can easily be made with a blender or food processor)

1 1/2 cup fresh raspberries 
1/4 cup extra virgin olive oil
Juice of one lime 
1 tbls honey 
1/4 tsp salt 
1/4 tsp pepper 

Put the berries in a bowl and using a fork, mash them. Add the rest of the ingredients and stir to combine. Taste and check for seasoning.

Goat Cheese Balls:
4 ounce goat cheese ½ cup panko bread crumbs 1 egg mixed with one tbls water to make an egg wash  ⅓ cup flour

Slice the goat cheese into 6 slices and roll into balls.  If you have time, park them in the freezer for 20 minutes to set up a bit before rolling. 
Add the flour to a bowl and roll the goat cheese balls into the flour. 
Next dunk them into the egg wash flipping to coat well. 
Lastly, press them into the panko. 

Heat vegetable oil or olive oil in a shallow pan over medium heat.
Fry the goat cheese turning  every 15-30 seconds until golden brown.
Drain on a paper towel-lined plate and serve right away.
