I make a lot of dishes because my family loves them… I make this one because I love it.  Stuffing calamari with lots of seafood, Spinach, Parmesan, breadcrumbs and herbs and then braising the flavorful tubes in marinara is a bit of work, but so worth it.  It’s a fun weekend project and one that the family will love you for.

Seafood and Spinach  Stuffed and Braised Calamari

12 clean calamari tubes, about 5 to 6” long
1/2 lb peeled & deveined shrimp, roughly chopped
1/2 lb small bay scallops 
3 cloves garlic, chopped
2 cups chopped baby spinach
2 eggs
3/4 cup bread crumbs
1/2 cup grated Parmigiano 
1 cup parsley leaves, chopped
2 pinches crushed chili flakes
1 tsp salt 

Extra-virgin olive oil
1 medium onion, finely chopped 
2 cloves garlic, chopped
1 (28oz) can crushed tomatoes 
1 cup water 
3/4 cup white wine
Pinch crushed red pepper flakes
Kosher salt

Chopped parsley or basil for garnish 

Roughly chop 2 of the calamari tubes and add to a food processor with the chopped shrimp and scallop and garlic. Pulse into a coarse paste. Remove to a large bowl and add the chopped spinach, eggs, bread crumbs, cheese, herbs, chili flakes and salt and stir to combine. The mixture should be a little chunky but moist and holding together. Divide the stuffing among the remaining tubes and secure closed with toothpicks. ( I like to put the filling in a large ziploc bag and cut the end off. Squeeze the filling into each tube best you can)
 
Heat the oil up in a wide pot or deep skillet. Add the onions and a pinch of chili flakes and saute for about 7 minutes.  Add the garlic and saute a few more minutes.  Add the tomatoes, water and wine and season with salt.  Bring to a boil and then reduce to a simmer.  Simmer for 15 minutes, partially covered. 
Add the calamari and cook for 20 to 25 minutes turning them over halfway through the cooking time. Remove the calamari from the pan and remove the toothpicks.

I love to serve over pasta, rice or mashed potatoes with a drizzle of extra sauce on top. 
Garnish with parsley or basil
