A wise woman once taught me, “When life breaks your eggs... Make Quiche” 

**Also, I kept this vegetarian but you can easily add some crispy chopped bacon to the filling!

When I have a brunch I often fall back to quiche.  It’s the perfect thing to make ahead and just reheat! I will usually do one vegetarian, one non-vegetarian and often times one with seafood… like a crab version. 

**Also, I keep a decorative jar of my ‘pie beans/weights’ in my kitchen.  I reuse them over and over again

Broccoli Cheddar Quiche

Pie Crust:
(This makes one pie crust)
1/2 cup cold butter cut into pieces 
1 1/4 cups flour
1/2 tsp salt
3-4 tbls ice water

Combine flour and salt in food processor and pulse to mix. 
Add butter and pulse until it resembles crumbs. Add enough water so that when you pulse a few times, the dough begins to  form a ball. If you find your mixture is too dry, you can add another tbls of water. 
Turn the dough out onto a floured  surface. Press the dough ball into a disk and flatten slightly. Wrap in plastic and refrigerate at least 30 minutes
Roll dough out and fit into a deep dish pie plate. Crimp the edges refrigerate until the filling is made

FIlling:
6 large eggs
1/2 cup chopped red onion 
3 garlic cloves chopped 
1 1/2 cups heavy cream or whole milk (I used milk for this one)
1 cup shredded cheddar cheese 
1/4 cup shredded gruyere cheese
1/2 tsp salt 
1/2 tsp  pepper
1/4 tsp smoked paprika 
1 pinch crushed red pepper flakes
2-3 cups broccoli florets chopped

Preheat the oven to 375F. 

Line a pie plate with a pie crust and crimp the edges. Lay a piece of parchment in the crust and fill it with pie weights or fry beans like I use.  Press the beans in tightly and bake the crust for 15 minutes. 

Meanwhile, whisk together all ingredients except for broccoli until smooth. Fold in the broccoli florets.  Set aside. 

Remove pie crust from oven and  carefully remove the paper and beans.  Fill the par baked crust with the quiche filling, smooth it out and place back in oven. 

Bake for 60 minutes or until golden on top and set in the center.
