It’s Memorial Day weekend which means the official start of Summer, which means this sandwich on repeat FOREVER 🍅

And… if summer were a sandwich, it would be this one

These are the quintessential flavors of the summer and I will never ever tire of them or stop thinking of ways to enjoy them. 
Tonight’s ode to Caprese flavors are in the form of a sandwich.  Anchored on a focaccia bread that’s been sliced in half, you want to spread basil pesto on the top half.  On the bottom half, drizzle with olive oil and balsamic glaze.  Lay down slices of tomatoes. Season with salt and pepper.  Lay down mozzarella slices and then drizzle with olive oil.  Lay down a couple handfuls of arugula and then a final drizzle of balsamic glaze.  Close the sandwich and slice that gorgeous creature up 🍅 🌿 🥖
