Happy Cinco de Mayo! Celebrate with something fresh—I’m sharing my go-to ceviche recipes below. Light, zesty, and pairs perfectly with some fresh guacamole, pico, & chips. Enjoy!

Classic Ceviche
Ingredients
* 3/4 pound fresh fish like grouper, cut into chunks
* 4 large scallops, quartered
* 6 limes, juiced (about 3/4 cup)
* 1 orange, juiced (about 1/4 cup)
* 1/2 cup red onion, thinly sliced
* 1/2 cup tomatoes, diced
* 1 tablespoon jalapeño, diced
* 1 teaspoon sea salt
* 1/4 teaspoon pepper
* 1/4 teaspoon garlic powder
* 1/2 cup mango or pineapple, cut into chunks
* ¼ cup cilantro, minced Directions:
1. In a shallow bowl, add the fish, lime juice, orange juice, onions, tomatoes, jalapeño, salt, garlic powder, pepper, and cilantro. Stir to combine.
2. Cover the bowl with plastic wrap and store in the refrigerator to marinate for at least 2 hours. After 1 hour, stir ingredients to make sure everything is coated in the marinade and add the mango or pineapple chunks.
3. After 2 hours, stir again and garnish with fresh cilantro.
Serve with chips and Enjoy!

Aquachile
Ingredients:
* 1 pound raw shrimp (peeled and deveined, tails
removed)
* 1/2 cup red onion, thinly sliced
* 1 cup cucumbers, diced
* 1 jalapeños, thinly sliced
* 2 limes, juiced
For the Aguachile Marinade:
* 3/4 cup lime juice
* 1 1/2 teaspoon garlic, minced
* 1 cup cilantro
* 1/2 jalapeño, seeds & veins removed
* 1 teaspoon sea salt
* 1/2 cup water
Directions:
1. Steam the shrimp for about 2 minutes. Just until they turn pink. Then cool completely.
2. In a blender, add the marinade ingredients and blend
until smooth
3. In a shallow bowl, combine the marinade with all other ingredients as well as the shrimp.
4. Cover the bowl with plastic wrap and store in the refrigerator to marinate for at least 2 hours. After 1 hour, stir ingredients to make sure everything is coated in the marinade.
5. After 2 hours, stir again and garnish with fresh cilantro.
Serve with chips and Enjoy!
