I am a cheesecake girly through and through. While I’ll always have a soft spot for a creamy NY-style cheesecake, I prefer the lightly sweetened, barely-cooked-through texture of ✨San Sebastián’s burnt basque cheesecake.✨

With a hint of lemon and a melt-in-your-mouth creaminess that can’t be beat, this is the *perfect* make-ahead dessert because (1) it’s served at room temp and (2) it’s meant to sit on a kitchen countertop overnight, leaving precious fridge space for whatever else you’ve dreamed up.

Truly—this is how it’s done at La Viña. 🙌🏻 When I visited last year, there were *dozens* of cheesecakes resting on shelves near the ceiling, waiting for tomorrow’s guests. Still dreaming of that slice every single day.
