Currently craving: quick, simple, and boldly flavored ✨Chorizo Tacos✨ which cook up in less than 20 minutes!

I’m such a fan of taco night, whether we’re using tortillas or piling everything into rice bowls or salads. But you just can’t beat the convenience of (or flavor) of Mexican chorizo.

Make sure to get uncooked chorizo as opposed to the dried cooked version, but beyond that, these are totally customizable. My preference is to keep it really simple: chopped onion, cilantro, lime wedges, and a drizzle of homemade crema. Doesn’t get more delicious (and honestly this feels like a nice way to ease into the week… 😂)!
