Is there anything more comforting than chicken and rice??  Ingredients - 1 1/4 lb. boneless, skinless chicken thighs, cut into 1-in. pieces - 1 1/2 tsp. black pepper, plus more for garnish - 1/2 tsp. paprika - 1 Tbsp. kosher salt, divided - 2 Tbsp. olive oil - 1 1/2 cups chopped yellow onion (from 1 medium [8 oz.] onion) - 3/4 cup finely chopped carrot (from 1 large [6 oz.] carrot) - 1/2 cup finely chopped celery (from 2 medium [2 oz. total] celery stalks) - 6 Tbsp. (3 oz.) unsalted butter, cut into 6 pieces, divided - 3/4 cup (6 oz.) dry white wine - 1 Tbsp. finely chopped garlic (from 3 garlic cloves) - 1 1/4 cups uncooked jasmine rice, rinsed - 2 3/4 cups chicken broth - 1 cup frozen green peas, thawed - 1/2 cup heavy whipping cream - 2 1/2 oz. Parmesan cheese, grated (about 2/3 cup), plus more for garnish - 1/4 cup thinly sliced scallions (from 2 medium [1 oz. total] scallions) Directions 1. Toss together chicken, pepper, paprika, and 1 1/2 teaspoons of the salt in a medium bowl until evenly coated. Heat oil in a large Dutch oven with a tight fitting lid over high; add chicken, and cook until browned on all sides, about 5 minutes total. Transfer to a plate using a slotted spoon, reserving drippings in Dutch oven. 2. Add onion, carrot, celery, and 2 tablespoons of the butter to Dutch oven, and heat over medium-high. Cook, stirring often to loosen browned bits from bottom of Dutch oven, until softened, about 4 minutes. Add wine and garlic; cook, stirring occasionally, until fully reduced, 4 to 5 minutes. Add rice; cook, stirring constantly, until nutty in fragrance, about 1 minute. Stir in broth and remaining 1 1/2 teaspoons salt; bring to a boil over high. 3. Stir chicken and any accumulated juices into Dutch oven. Reduce heat to low; cook, covered, until liquid is mostly absorbed and rice is tender, about 15 minutes. 4. Remove from heat; let stand, covered, for about 10 minutes. Uncover and add peas, cream, Parmesan, and remaining 4 tablespoons butter; gently stir to combine.
