Then check out my Spinach Tortellini Soup! It’s frightfully delicious, cozy, and ready in a flash! 🍲✨ It’s one of my fall staples and just what you need to warm up your ghoulie soul before the night’s adventures begin. 💀🕯️
🧡 Trust me… this one’s a real treat! Here’s my recipe: 

Ingredients (serves 4–6)

1 lb  Italian sausage (sweet or spicy), casing removed

1 small onion, diced

2–3 cloves garlic, minced

6 cups chicken broth

1 (14.5 oz) can diced tomatoes (optional, for a tomato-based soup)

1 tsp Italian seasoning

Salt and pepper, to taste

1 (9–12 oz) package refrigerated or frozen cheese tortellini

4 cups fresh spinach

1/4 cup grated Parmesan (optional, for serving)

Instructions
Cook the sausage: In a large pot over medium heat, crumble and cook sausage until browned. Remove excess grease if needed.

Sauté aromatics: Add onion and garlic to the pot. Cook until softened, about 3–4 minutes.

Add broth and seasonings: Pour in chicken broth, diced tomatoes (if using), Italian seasoning, salt, and pepper. Bring to a simmer.

Cook tortellini: Add tortellini and cook according to package instructions (usually 3–5 minutes for fresh/refrigerated).

Add spinach: Stir in fresh spinach just before serving; it will wilt quickly in the hot soup.

Serve: Ladle into bowls and sprinkle with Parmesan if desired.
