## Caption

I had a serious craving for butternut squash pasta the other night and now I’m not sure I’ll ever stop making this. 💯 Turns out this is the ultimate cozy fall dinner — rich, creamy, and perfectly balanced with smoky chorizo and sweet, caramelized squash.

Going to work on getting this up on the blog, but in the meantime, the FULL RECIPE IS BELOW. Hope you love!

✨For the Butternut Squash✨
1 medium butternut squash, peeled, seeds removed, cut into ½-inch cubes
2 Tbsp extra virgin olive oil
1 tsp garlic powder
1 tsp kosher salt 
½ tsp ground cinnamon
½ tsp freshly ground black pepper

✨For the Pasta✨
12 oz dried pasta, such as fusilli or rotini
Kosher salt
2 Tbsp extra virgin olive oil, plus more for serving
1 medium red onion, peeled, halved, and thinly sliced into half moons
2 scallions, thinly sliced (separate the white and green parts)
1 lb uncooked pork chorizo, casings removed
3 cloves of garlic, peeled and finely chopped
2 Tbsp finely chopped fresh sage
½ cup mascarpone cheese
5oz fresh baby spinach
⅓ cup Pecorino Romano or Parmigiano Reggiano, grated, plus more for serving
2 Tbsp unsalted butter
Freshly ground black pepper
Flaky sea salt

1. Preheat oven to 425°F (220°C). Roast the squash (with olive oil and spices listed above) on a rimmed sheet pan until golden and caramelized. Cook the pasta until al dente, reserving a little pasta water for later.

2. Sauté onion and scallion whites in olive oil until soft, then add chorizo and cook until browned. Stir in garlic and fresh sage, then toss everything together with the roasted squash, mascarpone, spinach, and a splash of pasta water until the sauce is silky and coats the pasta.

3. Finish with a knob of butter, a drizzle of olive oil, and plenty of grated cheese and black pepper. Cozy, rich, and full of fall flavor. 🍂
