@kalejunkie 🍎🍌HIGH PROTEIN APPLE BANANA BREAD…the perfect transition into fall baking 👩🏻‍🍳. But unlike other sugar filled treats that leave you in a food coma, this one is packed with protein and fiber to keep you feeling fuller, longer. It’s great to enjoy for breakfast or any time of the day, and it freezes well too. So go ahead, double the recipe and make two loaves; one to eat and one to freeze for later🙂.⁣

Makes 8-10 slices⁣
2 tsp avocado oil⁣
2 apples of choice, chopped (I use honey crisp)⁣
3 tsp cinnamon, divided⁣
2 very ripe bananas⁣
2 eggs⁣
2 tsp vanilla extract ⁣
1/2 cup cottage cheese⁣
1/4 cup maple syrup ⁣
2 1/4 cups almond flour⁣
1 1/4 tsp baking soda⁣
⁣
Preheat oven to 350F. Line a standard size loaf pan with parchment paper (or the amazing silicone liner I’m using). Chop apples into small pieces. Add avocado oil to a pan over medium heat. Once the pan is hot, add the apples and two teaspoons of the cinnamon. Stir and let cook down for about 5 minutes, then remove from the heat and set aside. Next, in a blender, add the banana, eggs, vanilla, cottage cheese and maple syrup. Blend until smooth and set aside. Then, in a large bowl, mix together the dry ingredients—almond flour, baking soda and one teaspoon of the cinnamon. Pour in the liquid ingredients from the blender and mix well so there are no clumps. Pour half of the mixture into the pan and an even layer, followed by half of the apple mixture. Add remaining batter on top, followed by the remaining apple pieces. Shake the pan/tap it on the counter if necessary so everything is even. Bake for 55-60 minutes or until a toothpick comes out clean. Note, you can cover the pan with foil after 30 minutes or so if the top is starting to brown too much. Let cool completely, cut into slices and enjoy! #fallbaking #healthybaking
