I am using @alecsicecream grass-fed A2 Pistachio Crunch ice cream, which is packed with kettle-candied pistachios and chocolate flakes, and infused with @getgraza single origin olive oil—there are no words to describe how good this flavor is! It’s the “it” flavor of the summer! 
Makes 9 sandwiches
18 graham cracker squares
1 cup kataifi (crispy phyllo)
1 tb unsalted butter
2 tb pistachio butter or spread
2 pints @alecsicecream pistachio crunch
3/4 cup chocolate chips
1 tb coconut oil 
Take the ice cream out of the freezer to soften while you do everything else. Line an 8x8 baking dish with parchment paper or saran wrap. Line up 9 graham cracker squares. Next, make the phyllo mixture. Melt butter in a pan. Toast the phyllo and once golden brown, remove from the heat and mix in the pistachio spread. Set aside. Next, melt the chocolate. Add chocolate chips and coconut oil to a small glass container. Melt in the microwave 2-3 30-second increments. Stir until smooth and set aside. Now, spread half of the phyllo mixture on top of the graham cracker layer. Add the softened ice cream on top and smooth with a spatula. Drizzle chocolate on top followed by remaining phyllo mix, then 9 more graham cracker squares. Freeze for 2 hours until the ice cream has hardened again.
