My lucky taste testers for this recipe were my kids and my baseball mama friends and they rated this
Now you get to be the judge. These are perfect for snacking, breakfast, or anytime the craving hits. Oh, and they freeze well too!!!
Makes 16 cookies
1/2 cup unsalted butter (1 stick)
1 very ripe medium banana
2 tsp vanilla extract
2 tb white miso paste
3/4 cup coconut sugar
1/2 tsp cinnamon
11/4 cups gluten-free 1:1 flour (or AP flour)
1 cup rolled oats
1/2 tsp baking soda
1/2 tsp kosher salt
3/4 cup dark chocolate, roughly chopped (or chocolate chips)
Melt the butter in a small saucepan over medium heat, until the butter turns golden brown and starts to smell incredible. This will take about 3-4 minutes. Keep a close eye on it, because when the butter starts to foam up, it can go from brown to burnt in a few seconds. When the butter has been browned, remove pan from the heat, and pour the butter into a small bowl to cool. Mash banana well and transfer to a large bowl. Add the vanilla and miso, mixing well. Add in the coconut sugar, cinnamon, brown butter, flour, oats, baking soda, and salt. Mix until there are no clumps then told in most of the chocolate chunks, reserving some for after baking. Place the batter in the refrigerator for at least 30 minutes. Preheat oven to 350F.
Line of baking sheet with parchment paper. Form 16 cookies and bake for 12-14 minutes. They should still feel very soft. Remove from oven. Press remaining chocolate pieces on top, and let cool for 5 minutes before devouring.
