Be sure to follow @kalejunkie for healthy, nourishing recipes like this 🍉🍓 WATERMELON STRAWBERRY CUCUMBER & FETA SALAD with honey vinaigrette! If you haven’t noticed, I loveeeee salads! They are crunchy, filling, packed with flavor and I never get tired of them bc the combos are endless! This one is inspired by my friend @melissas_healthykitchen! If you aren’t someone that likes fruit in your salad, same—until recently. I get it now!

Honey vinaigrette 
1/3 cup olive oil
3 tb apple cider vinegar 
2 tb dijon mustard
1/4 cup honey
2 cloves garlic
2 tb oregano
1 tsp kosher salt
1/2 tsp ground black pepper

1/2 seedless watermelon, cubed (~5 cups)
1 pint strawberries, sliced (~1 1/2 cups)
4 persian cucumbers, cut into 1/4” coins
1 cup feta, cubed
1/2 cup fresh mint, chopped

Prepare the dressing. Add all of the ingredients to a mini blender and blend until smooth. Taste and adjust seasonings as needed. Next, chop your fruits and veggies and add to a large bowl. Toss with the dressing and enjoy!
