FOLLOW @kalejunkie SAUCY GOCHUJANG
CHICKEN NOODLES is what’s on the menu for dinner tonight! It was only this past year when I began experimenting with using gochujang in my cooking (in fact my first time trying it was when
@ambitiouskitchen came over last year and we made the sheet pan salmon with gochujang from her cookbook). It has since become a favorite! If you aren’t familiar, gochujang is a fermented chili paste that is both sweet and savory, used in Korean cooking! You can find it at pretty much any grocery store and yes, you will use it all the time, because this is one recipe you will be making on repeat! Hope you love!
Makes 4 servings
Gochujang Sauce:
1/3 cup low sodium soy sauce (or coconut aminos)
3 to gochujang sauce
1/4 cup tahini (or peanut butter or cashew butter or almond butter)
3 tb tomato sauce
3 tb coconut sugar
3 tb sesame oil
2 cloves garlic
1/2 cup water (to thin sauce)

Ramen:
2 tsp avocado oil
1 lb ground chicken
1/2 tsp kosher salt
1/2 tsp ground black pepper
3-4 packets ramen of choice, seasoning packets discarded
1 bunch green onions, sliced thin (1/2 cup)
1/4 cup cilantro, finely chopped
1 bunch chives, finely chopped (1/4-1/3 cup)
In a small blender, add all of the sauce ingredients and blend until smooth. It should form a thick sauce.
Taste and adjust seasonings as needed and set aside. Next, add avocado oil to a skillet over medium heat. Once the pan is hot, add the ground chicken and cook until browned and cooked through. Season with salt and pepper. Meanwhile, bring a large pot of water to a boil and add the ramen. Boil the noodles for just a few minutes until softened. Drain and transfer to the skillet with the chicken. Pour sauce on top and toss to coat well. Add fresh herbs and toss again. Divide between 4 bowls and enjoy!
