@kalejunkie ✨ CHEWY CINNAMON ROLL BARS, for when you are craving a cinnamon roll but want something that is so much easier to make. These bars are gluten-free, dairy-free and refined sugar-free, and they keep perfectly in the fridge to enjoy all week long. I also put them in my kids lunches and they were so happy. These bars are chewy, moist and melt in your mouth! I wish there were more words to describe how good these are, but there aren’t, so go make them and report back.

Makes 12 bars
BASE:
3 cups almond flour
1/4 cup coconut flour
1/3 cup coconut sugar
1/2 tsp kosher salt
1/2 cup maple syrup
1/3 cup coconut oil, melted & cooled
2 tsp vanilla extract
1 egg, room temp (important)

FILLING:
1/3 cup almond butter
1/3 cup maple syrup
2 tsp cinnamon
1 tsp vanilla extract

ICING:
1 1/4 cups powdered monkfruit (for sugar free) or regular powdered sugar
2 tb maple syrup
1/2 tsp cinnamon

Preheat oven to 325F and line an 8x8 pan with parchment paper. In a large bowl, mix together the dry ingredients—almond flour, coconut flour, coconut sugar and salt. Add the wet ingredients—maple syrup, cooled coconut oil, vanilla, and egg. Mix together well until everything is coated and no clumps remain. Add half of the mixture to the pan. Use a spatula to smooth and press down into an even layer. Next, make the filling. In a medium bowl, add the almond butter, maple syrup, cinnamon and vanilla. Mix well until fully incorporated. Spread the mixture on top of the base in the pan, using a spatula to ensure it is an even layer. Then, spoon remaining the dough mixture on top in dollops and then spread with a spatula and the filling is covered. Bake for 25-26 minutes. Remove from oven and let cool completely. Finally, make the glaze. Add powdered sugar, maple syrup and cinnamon to a bowl and whisk until completely smooth and there are no clumps. This should be SUPER THICK, but if you need to thin just a bit, add a tsp or two of water. Pour glaze on top.  Cut bars and enjoy! Store in a covered container in the fridge for a week. ENJOY!
