@kalejunkie ✨ SPANAKOPITA PHYLLO RIBBON PIE, ie, the most delicious and easy dish to make for Easter or anytime! I made this using my fav spices from @simplyorganicfoods and it turned out 12/10. I hope you guys give this recipe a go, it’s TOTALLY DOABLE and I promise—when it comes out of the oven, you’ll feel like a profesh chef 👩🏻‍🍳! ⁣

Makes 12 servings ⁣
1 package phyllo dough, defrosted⁣
1 bunch italian parsley, chopped⁣
1 small yellow onion, chopped⁣
1 16oz package frozen spinach ⁣
2 eggs⁣
3/4 cup cottage cheese⁣
1 8-10 oz container feta cheese, crumbled⁣
2 tsp @simplyorganicfoods garlic powder⁣
2 tsp @simplyorganicfoods dried dill⁣
2 tsp @simplyorganicfoods dried thyme⁣
1 tsp kosher salt⁣
1 tsp @simplyorganicfoods black pepper⁣
2 tb butter melted⁣
2 tb @simplyorganicfoods sesame seeds⁣

Preheat oven to 375F. Defrost phyllo dough according to package instructions. Chop parsley and onion and place in a large bowl. Defrost spinach and use towels to drain out as much liquid as possible. Add spinach to same bowl, along with the eggs, cottage cheese, feta, garlic powder, dill, thyme, salt and pepper. Mix well. Keep the phyllo in a log and cut as shown into 1 inch thick slices. Grease a 9x11 baking dish well. Add half of the phyllo ribbons to the bottom of the pan. Add the spinach mixture on top, followed by remaining phyllo ribbons. Brush lightly with melted butter and top with sesame seeds. Bake for 40 minutes, until golden and crunchy on top. Remove from oven. Cut into 12 squares. Serve and enjoy!⁣
