@kalejunkie Hi! Go make my LOADED BAKED ZITI WITH SPRING VEGGIES! I made it using my latest obsession, @bionaturae_organics sourdough pasta! Sourdough pasta adds so much flavor, it tastes like a fresh baked loaf of sourdough, but in pasta form. The best part is that it’s organic and made with fermented grains to support gut health!

Makes 6 servings
1 12oz box bionaturae sourdough penne rigate
2 zucchini, sliced into 1/2 inch coins or moons
2 summer squash, sliced into 1/2 inch coins or moons
1 pint baby tomatoes
1 tb olive oil
1 tb italian seasoning
1 tsp kosher salt
2 cups cottage cheese
3/4 cup freshly grated parmigiano reggiano cheese
1 tablespoon olive oil
1 tablespoon red wine vinegar
1/2 cup basil, finally chopped
2, 32-oz jar marinara sauce (I used bionaturae marinara)
1 cup mozzarella, shredded

First, boil pasta according to package instructions. Drain and set aside. Turn your broiler onto high and place baking rack 6 inches from the top of the oven. Add chopped zucchini, summer squash and tomatoes to a baking sheet lined with foil. Toss with olive oil, Italian seasoning, and salt. Broil for about 10 minutes, until roasted. Keep an eye on it so the veggies don’t burn. Remove from oven. In a small bowl, stir together the cottage cheese, parm, vinegar, basil and oil. Next, in a large bowl toss pasta with marinara. Layer half the pasta in a baking dish, followed by half of the cheese mixture, then the remaining pasta and remaining cheese mixture on top. Sprinkle with mozzarella cheese. Bake for 25 minutes, then broil for two minutes at the end until the top is golden and crunchy. Serve and enjoy.
