These muffins are literally perfect in every way and make the perfect breakfast or snack to enjoy all week long! The glaze is optional, but not 💁🏻‍♀️.⁣

Makes 12 muffins⁣
1/2 cup + 2tb coconut oil, melted & cooled⁣
3/4 cup coconut sugar ⁣
2 tsp vanilla ⁣
2 eggs⁣
3/4 cup non-dairy milk of choice (I used almond)⁣
1 lemon juiced (1/4 cup)⁣
1 lemon zested⁣
1 1/2 cups gf baking flour (I use @bobsredmill gf 1:1 baking flour)⁣
1/4 cup vanilla protein powder ⁣
1 tsp baking soda⁣
1/2 tsp kosher salt⁣
1 3/4 cups fresh raspberries ⁣
⁣
Glaze ⁣
1 cup powdered sugar⁣
1 tb lemon juice⁣
⁣
Preheat oven to 350 in line a muffin tin with liners. In a bowl, whisk together the melted coconut oil and sugar and vanilla. Then add the two eggs and continue whisking until smooth, then add the milk, lemon juice, and lemon zest. Set aside. In another large bowl, mixed together with the dry ingredients—flour, protein, powder, baking soda, and salt. Next, pour the wet ingredients into dry and mix until incorporated, being careful not to over mix. Then fold in the raspberries. Use a cookie scoop to fill each buffing cavity about 3/4 of the way. Bake for 26–28 minutes, or until the toothpick comes out clean. Let the muffins cool completely before adding the glaze. To make the glaze, simply whisk together the powdered sugar and lemon juice until smooth and no clumps, and drizzle on top. Enjoy! Store leftovers in a covered container in the fridge for up to one week. You can also freeze these muffins for up to two months.⁣
