@kalejunkie PIZZA SALAD WITH CREAMY PARMESAN DRESSING 🍕 are we noticing a KJ salad overload lately? Why yes. That’s because I’m constantly crave big salads and what I post is what I eat 😏. This salad is inspired by the pizza salad at @littleoriginaljoes, one of my fav restaurants in SF (@elenaduggan ilysm!!!). One thing about me is when I find a restaurant I love, I go all the time and I get to know the menu and try all the different things. Their pizza salad had me swooning—its truly everything you’d want as a pizza topping but in salad form. So I had to recreate my version if you can’t get to the restaurant. The only difference is that they add provolone cheese but I don’t like provolone so I left it off. And I used pepperoni instead of salami for pizza vibes. Anyway. Go make it.

Makes 4-6 servings
6 cups romaine lettuce, chopped (about 2 heads)
1 cup baby tomatoes, halved
1/4 cup finely sliced red onion
3/4 cup kidney beans (canned, drained and rinsed)
3/4 cup garbanzo beans (canned, drained and rinsed)
3/4 cup finely sliced white mushrooms
1/4 cup pepperoncini, choppee
1/2 cup sliced black olives
1 cup pepperoni, chopped
1 1/4 cups croutons, chopped

Creamy parmesan dressing
1/3 cup extra virgin olive oil
2 tsp dijon mustard
2 tsp honey
2 cloves garlic
1 lemon, juiced
2 tb red wine vinegar
3/4 cup freshly grated parmigiano reggiano
1/2 tsp kosher salt
1/2 tsp black pepper

First, make your dressing. In a blender add all of the ingredients and blend until creamy. Taste and adjust seasonings as needed and set aside. Next, prepare all of the ingredients to build the salad—chopping and slicing the vegetables, pepperoni, and croutons, and draining and rinsing the beans. Now build your salad. In a large bowl, add the lettuce, followed by everything else. Pour the dressing on top, toss and enjoy.
