@kalejunkie 4 INGREDIENT COPYCAT TRADER JOE’S DARK CHOCOLATE BARK with PUFFED QUINOA AND RASPBERRIES 🍫 the perfect little Valentine’s Day treat! I bought these from TJ’s the other day and loved it so much, I had to make a better-for-you version so you can make it at home. This is the perfect treat to store in the freezer or fridge and pull out anytime the sweet craving hits!

Ingredients—
1 cup quinoa
3/4 cup freeze dried raspberries (I used 1, 1.3 oz bag)
1 1/2 cups dark chocolate chips (I used @hukitchen)
2 tsp coconut oil 
Flaky salt (optional)

First, toast the quinoa. In a small pan over medium-low heat, add the quinoa. You need watch it carefully, constantly stirring so the quinoa doesn’t burn. After 4-5 minutes, the quinoa will begin to change color to golden and will begin popping. Keep stirring, allowing to pop for another minute or so, then remove from the heat and set aside. Next, add chocolate chips to a large bowl. Add the coconut oil. Melt in the microwave in 2-3 30-second increments, until fully melted. Stir until smooth. Chop the raspberries into tiny pieces. Now add the quinoa and raspberries to the bowl with the chocolate and toss to coat well. Spread the mixture on a parchment lined baking sheet in an even layer. Garnish with additional raspberries on top. Freeze for at least one hour. Remove from the freezer. Sprinkle with flaky salt. Break into smaller pieces and enjoy. Store in the refrigerator (up to 1 week) or freezer (up to 1 month).
