When baked, the pancakes get extra crunchy on top and then soak up all that delicious custard-like filling, just like french toast. I’m using kodiakcakes Buttermilk Power Cakes (Flapjack & Waffle Mix), which I love because it’s made with 100% whole grains and 15 grams of protein per serving—which means this dish will keep you feeling satisfied longer! I can’t wait for you to try this recipe! It’s perfect for Christmas Morning, New Year’s Day or whenever you’d like something extra special!⁣

Makes 12 servings⁣
PANCAKES⁣
3 cups kodiakcakes Buttermilk Power Cakes (or any other Kodiak pancake mix)⁣
2 cups water⁣
1 cup raspberries, mashed (optional)⁣
3/4 cup chocolate chips⁣
⁣
FILLING⁣
3 eggs⁣
1 cup milk of choice ⁣
2 tsp vanilla⁣
1 tsp cinnamon⁣
⁣
First, prepare the filling. In a bowl, whisk together all of the filling ingredients until smooth and set aside. Next, make the pancakes. In large bowl, add the pancake mix, water, and mashed raspberries. Mix until just combined, but do not over mix. Fold in chocolate chips. Spray and nonstick spray and begin making pancakes, one by one, about 4-5 inches in size. You should get 12-14 large waffles. Once all the batter is done, cut each pancake in half, down the middle. Line them up, cut side down in an 8 x 8 baking sheet. Pour the filling mixture on top. At this point, you can cover with foil and let’s sit in your refrigerator overnight and bake in the morning, or skip this step and bake at 350 for 40-45 minutes. Remove from the oven. Add powdered sugar, fresh raspberries, then drizzle with maple syrup on top. Enjoy!⁣
