If you love twice baked potatoes, but don’t want the hassle of stuffing the mashed potatoes back into their skins and baking again, THIS is the recipe for you. Not only does it cut your cooking time in half, it tastes EXACTLY like a twice baked potato. And if you love the potato skins, don’t worry we are leaving some skin on, so you get that texture too. You can also make this dish in advance and pop it in the oven when ready to serve, which makes it the perfect Thanksgiving side! ⁣

Makes 10 servings⁣
3 pounds russet potatoes, scrubbed and skins roughly peeled⁣
8 slices bacon, cooked and chopped⁣
4 oz cream cheese⁣
3 tb unsalted butter⁣
1/2 tsp kosher salt⁣
1 tsp ground black pepper⁣
3/4 cup half and half (or whole milk or any dairy-free swap)⁣
1 cup sharp cheddar cheese, grated⁣
1 bunch chives, chopped (1/2 cup)⁣

Preheat oven to 400F. Line a baking sheet with parchment paper. Line up the bacon in a single layer. Bake for 18-20 minutes or until golden and crispy. Chop bacon and set aside. Next, clean and scrub potatoes very well. Roughly peel the potatoes, leaving some of the skin on (as shown in the video). Bring a large pot of water to a boil over high heat. Add potatoes, reduce heat to medium, and cook until tender (approximately 25 minutes - you do not want the potatoes mushy, so keep an eye on them). Once tender, drain water from the pot and return the potatoes to the pot. Begin mashing the potatoes into rough chunks, then add in the cream cheese, butter, salt, pepper, and half and half. Continue mashing until there are no large chunks. Transfer the potato mixture to an 8x8 baking dish and smooth into an even layer. Sprinkle cheese and bacon on top. Bake at 350F for 20-25 minutes, until the cheese has melted. Remove from oven and garnish with chives. ⁣

If making ahead of time, cover with foil and bake for 30 minutes. Remove foil and bake for another 15 minutes until the cheese is melted and the potatoes are heated through. Garnish with the chives & serve. ENJOY!⁣
