@kalejunkie THE ULTIMATE BEEF & BARLEY SOUP, aka a hug in a bowl! 🫂 You guys have been asking me for years for a classic BB soup, so here’s a version of the one my mom used to make for us—whether it’s classic, I don’t really know, but what I know is that it is GOOD. Very good. I am using chuck roast as the meat because it literally melts in your mouth! This soup freezes really well—so it’s a good one to defrost on a busy night when you don’t feel like cooking. Makes 8 servings⁣
1 2-3 pound chuck roast, cut into 1 inch pieces, fat trimmed⁣
2 tb olive oil⁣
2 large carrots, sliced into rounds⁣
3 stalks celery, thinly sliced⁣
1 medium onion, diced⁣
4 cloves garlic, mashed⁣
3 tb tomato paste⁣
1/4 cup low sodium soy sauce (or coconut aminos for a gf option)⁣
2 tsp dried thyme⁣
1 bay leaf⁣
1 tsp ground black pepper⁣
8 cups beef broth⁣
1 cup barley (medium)⁣
Garnish: fresh parsley, chopped⁣
⁣
In a large soup pot over medium heat, add the olive oil. Once hot, add the chuck roast pieces. Cook until just browned on all sides and transfer to a plate. You might need to work in batches. Next, add the carrots, celery, and onion to the empty pot, sautéing in the juices from the meat for about 4 minutes. Add the garlic, tomato paste, soy sauce, thyme, bay leaf and pepper, sautéing for one minute more, then add the meat back in, along with any juices that collected on the plate. Add the broth. Bring to a gentle boil, then cover and allow to cook for 50 minutes. Remove the cover, give everything a stir. Remove the bay leaf and add in the barley. Cook for another 25-30 minutes, uncovered, until the beef and the barley are tender. Taste and add salt/pepper if desired. Ladle the soup into bowls and garnish with chopped parsley. ENJOY!⁣
