@kalejunkie MINI TWIX BITES with homemade vegan date caramel—a million times yummier than a store/bought twix bar imo! I’ve had a big sweet tooth lately and these days I prefer bite sized treats to enjoy anytime the sweet craving hits. You can store these in the freezer or in the refrigerator, so you have them on hand at all times 💁🏻‍♀️. ENJOY!⁣

Makes 24 bites⁣
Shortbread layer—⁣
1 1/4 cups oat flour⁣
1/4 cup maple syrup ⁣
1 tsp vanilla extract ⁣
2 tsp avocado oil⁣
⁣
Date caramel layer⁣
16 pitted medjool dates⁣
1/2 cup almond milk⁣
2 tsp vanilla⁣
1/2 tsp salt⁣
⁣
Chocolate layer⁣
1 1/2 cups chocolate chips⁣
1 tsp coconut oil⁣
⁣
Preheat oven to 350F. Grease/line a mini muffin tin. In a medium bowl, mix together the oat flour, maple syrup, vanilla and avocado oil. Once there are no clumps, spoon 1 tsp of the mixture into each of the muffin cavities. Use your finger to press down evenly. Bake 12 minutes. Remove from oven and set aside. Next, make the date caramel. In a food processor, add dates, almond milk, vanilla and salt. Process until completely smooth, stopping the food processor at times to scrape down the sides. After about 3-4 minutes, the caramel should be smooth. Spoon 1 tsp of the caramel on top of the shortbread. Repeat until all muffin cavities are filled. Next, add chocolate chips to a medium bowl. Add the coconut oil. Microwave in 2-3, 30-second increments, until completely smooth. Spoon chocolate mixture on top of the caramel mixture. Place the tray in the freezer for 30 minutes to set. Eat and enjoy! Add extra Twix bites to a covered container and store in the fridge or freezer. ⁣
