@kalejunkie HEALING ONE POT CHICKEN ORZO SOUP that is definitely chicken soup for the soul 🥣. This is THE soup you make that’s nourishing, comforting and healing especially if you are feeling under the weather. It’s packed with chicken, orzo, veggies, lots of lemon, garlic and turmeric—a true winner that you will be making on repeat this season! You can use rotisserie chicken like I did or cook chicken in the soup. It’s big, hearty, and so flavorful. And PSA, it freezes well too, so freeze those leftover and defrost on a night you don’t feel like cooking dinner. I can’t wait to see your creations and repost!⁣

Makes 4-6 servings⁣
2 tb olive oil⁣
1 tb butter, unsalted⁣
3 sticks celery, chopped finely⁣
3 large carrots, peeled and chopped finely ⁣
1 small onion, diced finely⁣
3 cloves garlic, mashed⁣
2 tb corn starch/arrowroot/tapioca (to thicken)⁣
6 cups chicken broth⁣
1-2 lemons, juiced (I used 2 because I love it lemony!)⁣
2 tsp italian seasoning⁣
2 tb turmeric⁣
1 tsp ground black pepper⁣
1/2 tsp kosher salt⁣
1 1/2 cups shredded rotisserie chicken OR 1 lb boneless skinless chicken breast⁣
1 cup uncooked orzo⁣
Garnish: chopped parsley⁣
⁣
In a large soup pot/dutch oven, add the olive oil and butter. Once melted, add the celery, carrots, and onions. Saute for about 5 minutes, until the onions begin to soften. Add the garlic and the tapioca/arrowroot/corn starch and cook for another minutes. Next add the chicken broth, lemon juice, chicken, orzo, italian seasoning, turmeric, and black pepper. Stir well and bring the soup to a gentle boil. Cover, leaving the lid slightly cracked open. Reduce heat to low and simmer for 15 minutes if using rotisserie chicken. If using fresh chicken, let simmer for 25 minutes so the chicken is cooked through. Remove the lid and stir well, scraping any orzo that may be stuck to the bottom of the pot. If you used fresh chicken, remove it from the pot, shred and return to the pot. Ladle the soup in bowls, garnish with chopped parsley and enjoy!⁣
