2 cups chocolate chips (I used @enjoylifefoods)⁣
1 tb coconut oil (for melting the chocolate)⁣
1 cup creamy peanut butter⁣
2 tb coconut flour⁣
3 tb maple syrup⁣
2 tb coconut oil, melted⁣
⁣
In a microwave safe bowl, add the chocolate chips and coconut oil. Melt in the microwave in 2-3, 30-second increments, stirring in between rounds until the chocolate is completely smooth. In a pumpkin mold, fill each cavity 1/4 of the way with chocolate. You can do this with a small spoon, though I find that using a ziplock bag and cutting the tip is easier and quicker. Freeze for 10 minutes. While the chocolate is setting, make the peanut butter filling. In a bowl, add the peanut butter, coconut flour, maple syrup and melted coconut oil. Mix until smooth. Fill each cavity about 3/4 of the way with the peanut butter mixture. Add remaining chocolate to cover. Freeze for at least one hour or overnight. Pop them out and enjoy!⁣
