@kalejunkie SPAGHETTI SQUASH BAKE that happens to be a low carb, high protein, nourishing dish that the entire family will love, picky kids included. The baked spaghetti squash gets tossed with a hearty meat sauce and then topped with a bit of mozzarella and parmesan and then baked — creating a cheesy spaghetti squash bake/casserole that everyone will love. The best part? It makes great leftovers too :) I can’t wait for you to make this, be sure to tag me when you do so I can repost!⁣

Makes 8 servings⁣
2 medium spaghetti squash, cut lengthwise into 2” rings⁣
2 tsp olive oil ⁣
⁣
Meat sauce⁣
2 tb olive oil⁣
1 lb ground beef (80/20 or 90/10)⁣
1 small onion, finely diced⁣
1 bell pepper, finely diced⁣
4 cloves garlic, mashed⁣
1 tb italian seasoning⁣
1 tsp cumin⁣
1 tsp salt⁣
1/3 tsp ground black pepper⁣
1/4 tsp red pepper flakes⁣
1 24 oz jar marinara sauce of choice (I used @raoshomemade of course!)⁣
1 cup parmigiano reggiano cheese, finely grated⁣
1 cup mozzarella cheese, shredded⁣
Garnish: chopped basil⁣
⁣
Instructions:⁣
Preheat oven to 400F. Line a baking sheet with parchment paper. Cut spaghetti squash into rings, remove seeds and lay flat on the parchment. Brush with olive oil and sprinkle with salt and pepper and bake for 40-45 minutes. Remove from oven, let cool and then use a fork to fluff all the strands and remove the squash from the rings, then discard the rings. While the squash is in the oven, make the meat mixture. Add olive oil to a large skillet over medium heat. Once hot, add the beef. Let cook for 3-4 minutes until starting to brown, the add the onion, bell pepper, garlic and seasonings and saute for 4-5 minutes more. Next pour in the marinara sauce and toss to coat well. Bring to a simmer, cover and let cook for 5 minutes. Finally, transfer squash to a 9x13 baking dish, pour meat mixture on top and sprinkle evenly with the cheeses. Bake for 20 minutes, broiling for 2 additional minutes at the end for some bubbly goodness/light browning happening. Remove from oven, garnish with chopped basil, serve and enjoy!⁣
