SHEET PAN SESAME GOCHUJANG SALMON BOWLS from my friend @ambitiouskitchen’s New York Times best selling cookbook, AMBITIOUS KITCHEN! I had the pleasure of meeting Monique IRL after being internet friends for years and she is the best and so are her recipes! This recipe ⁣is super easy to make and both the green beans and salmon cook on a sheet pan, coated with a crave worthy sweet & spicy Korean gochujang sauce that brings all the flavors together. We served it with AK’s coconut rice, which you can also find in the cookbook, and just like that, you have a complete dinner on the table in under 30 minutes!⁣

Makes 4 servings⁣
MARINADE⁣
2 to 3 tablespoons gochujang⁣
(or sub sambal oelek)⁣
2 tablespoons toasted sesame oil⁣
2 tablespoons packed dark brown sugar (or sub coconut sugar)⁣
2 tablespoons rice vinegar⁣
2 tablespoons low-sodium soy sauce⁣
3 garlic cloves, minced⁣
1 tablespoon grated fresh ginger⁣
1 tablespoon sesame seeds⁣
⁣
SALMON AND GREEN BEANS⁣
4 (6-ounce) salmon filets⁣
10 ounces fresh green beans, ends trimmed⁣
⁣
SERVING⁣
Coconut Rice (page 217)⁣
1/4 cup sliced scallions⁣
1/4 cup chopped fresh cilantro⁣
Toasted sesame seeds⁣
⁣
INSTRUCTIONS⁣
1. Make the marinade: In a large bowl, whisk the marinade ingredients. Reserve 1/4 cup of the marinade in a separate bowl.⁣
2. Place the salmon and green⁣
beans in the large bowl with the marinade, and stir gently to coat. Marinate at room temp for 20 mins.⁣
3. Preheat oven to 400°F. Line a large baking sheet with parchment paper.⁣
4. Transfer salmon and green beans to the baking sheet, placing the fish skin-side down. Bake 10 to 12 mins. Switch the oven to the broiler setting on high. Broil until the salmon is crispy, about 2 mins.⁣
5. Remove from the oven and brush reserved marinade over the salmon and green beans.⁣
6.  Serve with coconut rice and garnish with scallions, cilantro, and sesame seeds.⁣
