@kalejunkie // PROTEIN PASTA CHIPS with homemade sauce 🍝 the year was 2020, pasta chips were trending, but I still make them. What’s not to love? They are so crunchy and fun to eat. When I make them, I use @eatbanza pasta because it tastes cooks just like traditional pasta and packs 20 grams of protein and 8 grams of fiber per serving; which means, this is a snack that will actually keep you full and nourished. ⁣

My sauce can be used in a variety of ways; I made a big batch as you can see here. I used some as a dipping sauce for this recipe and froze the rest to use on busy weeknights. ⁣
⁣
Pasta chips⁣
1 8oz package @eatbanza pasta of choice⁣
2 tb olive oil⁣
1 tb italian seasoning⁣
2 tb parmesan cheese⁣
⁣
Serve with store bought marinara or my homemade recipe!⁣
1 yellow onion⁣
3 cloves garlic⁣
1 tb italian seasoning⁣
1/4 tsp crushed red pepper⁣
1 tsp sugar (I used monkfruit)⁣
1 tsp kosher salt⁣
1/2 tsp ground black pepper⁣
2 tb olive oil⁣
1 26 oz can crushed tomatoes⁣
1/2 tsp worcestershire sauce⁣
1/2 cup fresh basil, chopped⁣
1/2 cup parmesan cheese⁣
⁣
Cook pasta until al dente. Rinse well and set aside. Preheat oven to 400F. Coat the cooked pasta in the olive oil, Italian seasoning, and parmesan cheese and toss until well-coated. Transfer to a parchment lined baking sheet and make sure the pasta is in a single layer (no overlapping). Bake for 20 minutes, shaking the tray at the halfway point to ensure all sides of the pasta get golden and crunchy. If using an air fryer, air fry at 400F for 10 minutes.⁣

To make the marinara—add onion, garlic, italian seasoning, crushed red pepper, sugar, salt and pepper to a food processor. Process until somewhat smooth but not liquidy! Add olive oil to a pot or pan over medium heat. Once hot, add the onion mixture and saute for 4-5 minutes. Add the tomatoes and worcestershire sauce. Cover and lower heat to medium. Let cook for 30 minutes. Remove cover and add the basil and parmesan cheese. Stir to coat well, taste and adjust seasonings as needed and enjoy!⁣
