VIRAL CUCUMBER SALAD IN A JAR, ie, the perfect way to eat an entire cucumber in one sitting 😏. Thanks to @logansfewd for the inspo! Here is my version! The idea behind this is that a large cucumber is sliced really thin using a mandolin and added to a large jar with toppings of choice 🤷🏻‍♀️. The possibilities are endless to make this your own. My version is SOOOOO GOOD! It is high in protein thanks to the greek yogurt and smoked salmon and is so good, I am craving it again today! Make it asappppppp and be sure to tag me!⁣
⁣
1 large English cucumber, sliced very thin⁣
1/4 red onion, thinly sliced⁣
1/2 cup smoked salmon, chopped finely⁣
2 tb toasted sesame oil⁣
1/2 cup plain greek yogurt (+ 2-3 tb water if your yogurt is thick)⁣
2 tb rice vinegar⁣
1 tb everything but the bagel seasoning⁣
⁣
Add all ingredients to a large jar. Cover, shake and enjoy. ⁣
