@kalejunkie GREEK STYLE NACHOS! This is the perfect app or meal when you are tired of traditional nachos and don’t want to turn on the oven! The chicken is optional, but I always add it because protein is #1 for me! You can make pita chips from scratch or just purchase from the store in a pinch (which is what I did). The toppings are my delicious homemade tzatziki, chicken, tomatoes, red onion, parsley and of course the feta. So, so delicious!⁣
⁣
Makes 6 servings ⁣
1-2 tb olive oil or avocado oil⁣
1 lb boneless, skinless chicken breast (usually 2 breasts)⁣
4 cups plain pita chips⁣
1 cup cherry tomatoes, halved⁣
1/4 cup red onion, finely diced⁣
1/4 cup italian parsley, finely chopped⁣
1/2 cup feta cheese, crumbled⁣
⁣
Tzatziki ⁣
1 1/2 cups plain greek yogurt⁣
2 persian cucumbers, small diced⁣
3 cloves garlic⁣
1/4 cup fresh dill, chopped⁣
1 lemon, zested and juiced⁣
1/4 tsp kosher salt⁣
1/4 tsp ground black pepper ⁣
2 tb olive oil⁣
⁣
Season chicken breasts generously with salt and pepper. Add oil to a pan over high heat. Once the skillet is hot (oil will slide around easily and glisten), add the chicken. Do not touch for 5-6 minutes. Carefully flip to the other side and cook undisturbed for another 5-6 minutes. Once the chicken reaches an internal temperature of 165F. Let rest and cut into cubes and set aside. Next, make the tzatziki by adding all of the ingredients to a bowl and mixing together. Taste and adjust seasonings as needed. Now, assemble your nachos, starting with the pita chips, tzatziki, tomatoes, onion, parsley and feta. Eat with your fingers or a fork and enjoy!⁣
