BANG BANG CHICKEN SKEWERS to round out all the different skewer recipes I have shared this summer! One of the reasons I love making skewers is because each piece of meat has perfect crunchy edges, they cook evenly and everyone loves them. This version is inspired by my bang bang grilled corn recipe, which uses the same bang bang sauce (if you haven’t tried that one, it’s a winner too!). You are going to love these. ⁣

And, if you don’t feel like grilling, you can also make these in your air fryer or on a grill pan on the stove - win win!⁣
⁣
Bang Bang sauce:⁣
3/4 cup greek yogurt⁣
1/2 cup mayo⁣
2 tb hot honey (or regular)⁣
1 lime, juiced⁣
1/3 cup thai sweet chili sauce⁣
1/4 cup sriracha⁣
1/2 tsp garlic powder⁣
⁣
Chicken:⁣
2-2 1/2 lbs chicken thighs, cut into 2 inch pieces⁣
1 tsp garlic powder⁣
1 tsp paprika⁣
1 tsp cayenne pepper⁣
1/2 tsp black pepper⁣
1 tsp kosher salt⁣
1/4 cup olive oil⁣
1/2 cup greek yogurt⁣

*If using wood skewers, be sure to soak them in water for at least 30 minutes to prevent burning. Prepare the bang bang sauce by mixing together all of the ingredients. Taste and adjust seasoning as needed. Pour 1/2 cup of the sauce into another small bowl, because you will use that to brush onto the chicken while it is on the grill. Next, cut the chicken into cubes, then toss in the seasonings, olive oil and yogurt. Ensure all pieces are coated well. Thread the chicken onto each skewer, making sure the pieces are close together. Repeat until all chicken is used. Heat the grill to 475F. Once the grill is hot, add the skewers. Leave undisturbed for 5-6 minutes. Brush the sauce onto each skewer. Rotate skewers, brush more sauce on. Leave for 5 minutes. Repeat until chicken has reached an internal temperature of 165F. Remove from grill. Serve with reserved bang bang sauce on the side. ENJOY!!⁣

Air fryer: add the skewers to the air fryer basket in a single layer - you may need to work in batches or cut the skewers in half to fit. Air fry at 400F for 11-13 minutes, flipping halfway. ⁣
