#ad PEANUT BUTTER FUDGSICLES and you would never know that the secret ingredient to making them extra creamy is TOFU! That’s right. You guys know that I am pretty new to making foods with tofu and this partnership with @u.s.soy over the last few months has really opened up my eyes to all the possibilities and you will be seeing more tofu in my content for sure! Today’s recipe really blew my mind. I had this idea to make fudgsicles with tofu but wasn’t sure how it would turn out and here we are—perfectly creamy, fudge goodness, dipped into more chocolate and rolled in crushed peanuts. You really need to try this recipe. ⁣

Makes 6 fudgsicles⁣
2/3 cup chocolate chips⁣
1 tsp coconut oil⁣
1 14oz package silken tofu, drained⁣
1/4 cup maple syrup⁣
1/4 cup powdered peanut butter (optional)⁣
1/4 cup water, if needed⁣
⁣
Topping⁣
2/3 cup chocolate chips⁣
1 tsp coconut oil⁣
1/2 cup salted peanuts, crushed⁣
⁣
In a small bowl, add the chocolate chips and coconut oil. Melt in the microwave in 2-3, 30-second increments until fully melted and smooth and set aside. Next, in a blender, add the tofu, melted chocolate, maple syrup, and powdered peanut butter. Blend on high until nice and smooth. If the mixture is thick, add the water and blend again. Pour the mixture evenly in 6 popsicle molds. Freeze at least 4 hours or until completely frozen. Once frozen, add chocolate chips and coconut oil to a small bowl and melt, as above, and chop the peanuts and place on a plate. Unmold each popsicle, dip in the melted chocolate and roll in the peanuts. Eat and enjoy!⁣
