It is bursting with flavor thanks to the peanut ginger dressing and it’s filled with lots of crunch and textures with all the veggies and the rice noodles! This is a salad you don’t want to miss. Including the recipe here for you👇🏼.⁣

Makes 4 servings⁣
For the Salad:⁣
* 8 Ounces Rice Noodles, cooked⁣
* 1 Cup Purple Cabbage finely shredded⁣
* 2 Persian cucumbers, sliced thin⁣
* 1 Red Bell Pepper, sliced⁣
* 1 Bunch Green Onions, finely chopped⁣
* 2 Carrots, sliced thin⁣
* ¼ Cup Cilantro, chopped⁣
* ¼ Cup Peanuts, salted, chopped⁣
* 1 Pound Shrimp, cooked⁣
⁣
For the Dressing:⁣
* ½ Cup Creamy Peanut Butter⁣
* 1 lime, juiced⁣
* ¼ Cup Coconut Aminos or 2 tsp fish sauce (that’s what I used today)⁣
* 2 Tablespoons Rice Vinegar⁣
* 2 Tablespoons Ginger freshly grated⁣
* 2 Teaspoons Maple Syrup⁣
* 1 tsp sriracha (optional)⁣
* 3 Tablespoons Water plus more, if needed.⁣
⁣
Start preparing your rice noodles according to the package directions. Once they’re done, drain the water, rinse well with cold water and add to a large salad bowl. Chop your veggies and add them to the salad bowl. Add the cooked shrimp. Last, prepare the dressing by adding all the dressing ingredients to a bowl. Whisk until creamy. Taste and adjust seasonings as needed. Pour over the salad, toss and enjoy!⁣
