If there is one thing I want to impart, it’s that cooking delicious, restaurant-quality food doesn’t have to be complicated or time consuming and you don’t need to have culinary experience. Buy fresh ingredients, trust yourself and HAVE FUN! This crispy chicken milanese is a family favorite and it’s perfect for a summer night. The KEY is to pound the chicken super thin so it cooks evenly and quickly in the skillet. My breading is a combination of panko and parmesan cheese for added flavor and then I top it with a tangy arugula salad. MAKE IT. Makes 4 servings⁣
2 lbs skinless chicken breasts, cut thin or halved and pounded thin⁣
2 eggs, whisked⁣
1 cup panko breacrumbs⁣
1 cup freshly grated parmigiano reggiano cheese⁣
3/4 cup all-purpose flour⁣
1 tsp garlic powder⁣
1 tsp kosher salt⁣
1/2 tsp ground black pepper⁣
3 tb avocado oil⁣
4-6 cups arugula⁣
1/4 red onion, thinly sliced⁣
2 tb olive oil⁣
1/2 lemon zested and juiced⁣
⁣
First, pound the chicken nice and thin; it should be 1/4-1/2 inch thick. If your chicken breasts are thick, simply slice them in half and then pound. I recommend placing the chicken between two pieces of wrap and pound as shown. Place thin chicken cutlets onto a place and prepare your dredging station. In one bowl, whisk together the eggs and set aside. In another bowl, mix together the flour and seasonings. Dip each chicken cutlet first into the flour mixture, then egg mixture and then the breadcrumb mixture. Next, add oil to a skillet over medium heat. Once the pan is HOT (the oil should slide across the pan evenly), add 1-2 pieces of chicken at a time. Let cook undisturbed for 3- 4 minutes and then flip to the other side for another 2-3 minutes. Finally, prepare the arugula salad, my mixing together the arugula, onions, olive oil, lemon zest and lemon juice. Plate your meal. Add 1-2 chicken cutlets to a plate, top with a heaping spoonful of the salad, more cheese, a squeeze of lemon and enjoy!⁣
