I am using @sweetlorens limited edition lemon cookies as the base and then each cookie is filled with the yummiest and most flavorful lemon curd! They taste exactly like a lemon bar, but BETTER!  Sweet Loren’s has partnered with Alex’s Lemonade Stand Foundation to celebrate Lemonade Days with this cookie and proceed from the sales of this flavor will go to Alex’s Lemonade Stand Foundation to help fund impactful research, raise awareness, support families and empower everyone to help cure childhood cancer.⁣

1 package @sweetlorens limited edition lemon cookies⁣
1 egg⁣
1 egg yolk⁣
1/2 cup powdered sugar⁣
2 tb lemon juice⁣
1 tb lemon zest⁣
1/4 tsp lemon extract (optional)⁣
1 tb unsalted butter⁣
⁣
Preheat oven to 325F. Line a baking sheet with parchment paper. Line up the precut cookies onto the baking tray. Bake 9-11 minutes, according to package instructions. Remove from the oven and use the back of a spoon to gently make an indentation. While the cookies are cooling, make the lemon curd filling. Add a glass bowl on top of a pot of barely simmering water (a gentle boil). Whisk together the egg, egg yolk, powdered sugar, lemon juice, lemon zest, and lemon extract. Whisk continuously until the mixture thickens, about 8-10 minutes. Remove from heat, add the butter, and whisk again until smooth and creamy. Let cool 10 minutes, then spoon the curd into the cookies. Refrigerate at least 30 minutes to firm up. Serve cold or room temperature.⁣
