Sure, we could have cut this sandwich into small pieces and made less of a mess, but we had so much filming this, we went for the BIG BOY SAMMIES!!!! Bigger is better! Messy is better! Try this and make it your own.⁣

Creamy Dill Dressing⁣
1 ¼ cup low-fat cottage cheese strained⁣
¼ cup milk⁣
¼ cup finely chopped fresh dill⁣
1 shallot, minced⁣
3 tbsp olive oil⁣
½ tsp garlic powder⁣
1 tbsp lemon juice⁣
zest from one lemon⁣
½ tsp salt⁣
¼ tsp black pepper⁣
½ tsp dijon mustard⁣
⁣
Salmon Sandwich⁣
1 large ciabatta roll⁣
1 ½ lbs salmon filets⁣
1 tsp olive oil⁣
1 tb paprika⁣
1 tsp kosher salt⁣
3/4 tsp onion powder⁣
3/4 tsp garlic powder⁣
½ tsp cayenne pepper⁣
½ tsp dried oregano⁣
½ tsp dried thyme⁣

Tomatoes, sliced⁣
Cucumbers, sliced⁣
Pickled onions, sliced⁣

Start by preparing the dressing. Blend all of the ingredients until smooth and creamy. Next, make the salmon. Mix together the seasonings and rub the salmon with the seasonings. Heat a skillet over medium-low heat. Add olive oil and a piece of parchment paper. Add the salmon and leave undisturbed for 4-5 minutes then flip to the other side for another 4-5 minutes until cooked to your preferred doneness. Remove from heat and set aside. Build the sandwich - cut ciabatta in half and add a generous amount of the dressing, followed by the tomatoes and cucumbers. Add the salmon and mash with a fork. Add more dressing, pickled onions, and cover with the top of the ciabatta bread. Cut into desired pieces and enjoy!⁣
