## Caption

VEGAN & GLUTEN FREE MIXED BERRY COBBLER COOKIES are a must make for spring and summer! 🍓🫐 @lovelydelites and myself, @kalejunkie, wanted to create a simple but delicious cookie recipe that came together with minimal ingredients and under 30 minutes- and we did just that! 😉 The texture is crispy and chewy with a homemade chia berry jam nestled in the center all before being topped with a sweet and salty streusel topping! It’s truly a match made in heaven and we hope you enjoy as much as we did!

Cookie base 
1/4 cup pure maple syrup
1/2 tsp almond extract
1 tsp vanilla extract
1/3 cup coconut oil, melted
2 cups almond flour
1/4 tsp salt
1 tsp cinnamon

Crumble Topping
2 tbsp vegan butter, melted (can use regular) 
1/4 cup coconut sugar
Pinch of salt
1/4 cup gluten-free flour, such as bob’s red mill 1:1

Mixed Berry Jam Filling 
1 cup of frozen or fresh mixed berries
1 Tbsp chia seeds
1 Tbsp fresh lemon juice
Optional- 1/2 Tbsp of sweetener of choice such as maple syrup or honey

Start by making the chia jam. In a small sauce pan, add in the berries and heat over medium to low heat, smashing them down until there are little to no chunks left. Remove from heat and add in chia seeds, lemon juice, and sweetener. Mix well and set aside to thicken. In a large bowl, mix together the maple syrup, melted coconut oil, vanilla, and almond extract. Then fold in almond flour, salt and cinnamon.  Mix with a spatula until a dough is formed. Use a single or double cookie scoop, and roll dough into a ball place on a baking sheet and then flatten with the palm of your hand. Use the back of a spoon to create a well in the center of each cookie, and fill each one with chia jam!  In a smaller bowl, mix together all the ingredients for the streusel, and then sprinkle on top of each cookie.  Bake at 350°F for 20-22 minutes. Like cool for 5 to 10 minutes before enjoying!
