This is Episode 12 of my series Dinner in 20, where I show you how to make easy, nourishing, restaurant-quality dinners in 20 minutes, and this one is a WINNER! The salmon is cooked using the parchment paper trick that prevents the salmon from sticking to the pan and giving it a nice crisp, and it is then covered in a delicious lemony-garlicy caper sauce that will have you licking the plate clean! So many of you love when I put the recipe in the caption, so I will do that once in a while :) Here you go, ENJOY!⁣

INGREDIENTS:⁣
16 oz salmon (2, 8 oz filets or 4, 4oz filets)⁣
Salt & pepper to season salmon⁣
2 tsp olive oil⁣
3 tb unsalted butter⁣
1 large shallot, finely chopped⁣
3 cloves garlic, mashed⁣
3/4 cup chicken or vegetable broth⁣
1/4 cup lemon juice, about one lemon⁣
2 tsp lemon zest (from above lemon)⁣
3 tb capers⁣
2 tb arrowroot or tapioca flour or corn starch (to thicken the sauce)⁣
2 tb Italian parsley, finely chopped⁣
⁣
INSTRUCTIONS:⁣
First, get out all of your ingredients. ⁣
Season the salmon generously with salt and pepper and set aside.⁣
Chop the shallot, mash the garlic, and juice/zest the lemon. Set everything aside. ⁣
Cut a piece of parchment paper into a square, large enough to cover the bottom of your pan. ⁣
Add olive oil to a large skillet over LOW-MEDIUM heat. ⁣
Press the parchment paper into the pan, then flip the paper to the other side, pressing down again, so both sides are covered in the oil.⁣
Add the salmon filets, skin side down and let cook undisturbed for 5 minutes, then gently flip to the other side and cook 4-5 minutes more, depending on prefered doneness.⁣
Remove from the skillet and transfer to a plate.⁣
Add butter to the pan and once melted, add the shallots and garlic and saute for 1-2 minutes.⁣
Add broth, lemon juice, lemon zest, capers and arrowroot/tapioca and stir well for 1-2 minutes or until the sauce thickens slightly.⁣
Remove pan from heat. ⁣
Add salmon back and spoon sauce over the salmon.⁣
Garnish with parsley and enjoy!⁣
