INA GARTEN’S ENGAGEMENT CHICKEN is hands down the best roasted chicken I’ve ever had in my life, so of course I am showing you how to make it too bc we all love an @inagarten creation. If you’ve never made a whole chicken before, do not be intimated; it is so easy and almost always yields lots of leftovers to enjoy during the week (protein is KING!). This dish is simple enough to make during the week but also a showstopper and perfect for entertaining—I’m making it for Easter and you should too!⁣

1 chicken, 4-5 pounds⁣
Kosher salt⁣
Freshly ground black pepper⁣
2 medium lemons⁣
1 whole head of garlic, sliced in half horizontally⁣
2 tb olive oil⁣
2 yellow onions, peeled and thickly sliced⁣
1/2 cup dry white wine (such as pinot grigio or sauvignon blanc)⁣
1/2 cup chicken stock⁣
1 tb all-purpose flour⁣

Preheat oven to 425°F. Pat the chicken dry. Sprinkle a generous amount of salt and pepper inside the chicken cavity. Slice both lemons into quarters. Place two of the quarters inside the chicken, along with both halves of the head of garlic. Drizzle the outside of the chicken with olive oil and sprinkle more salt and pepper. Use kitchen twine to tie the legs together (optional). Place the chicken in a roasting pan. Place the remaining lemon quarters and the sliced onions in a large bowl. Add olive oil, 1/2 tsp of salt and 1/2 tsp of black pepper; toss until coated. Pour the lemons and onions into the pan all around the chicken. Place chicken in the oven and roast for about 1 hour and 15 minutes (until it reaches 165 F). Remove chicken from pan and cover with foil. Place the roasting pan with the lemons and onions on a burner set to medium-high heat. Add in the white wine and use a wooden spoon to stir, scraping browned bits from the bottom. Add the chicken stock and the flour; stir constantly for about a minute until the gravy thickens. Carve the chicken, then spoon the onions and gravy over the pieces. Eat the roasted lemons, too—they will be very tender and ready to eat, rind and all.⁣
