Follow @kalejunkie for more! KALE SALAD WITH PARMESAN & LEMON BASIL DRESSING inspired by a delicious chopped kale salad I had a few weeks ago when I was in NYC!!! I knew the moment I took a bite, I had to recreate it for you, only my version is even better :) This is a great salad to add to your meal prep rotation because as you know, kale does not get soggy. And if you don’t love kale, I will tell you that the SECRET to loving it is chopping the kale thinly and massaging it so it softens.⁣

Makes 4 servings⁣
2 bunches curly kale, stems removed and chopped very finely⁣
1 cup panko breadcrumbs, toasted (or gluten-free breadcrumbs)⁣
1 cup freshly grated parmigiano reggiano (the restaurant I went to used pecorino romano but I like parm better!)⁣
6 leaves basil⁣
3 anchovies (OPTIONAL)⁣
3 cloves garlic⁣
1 tsp dijon mustard⁣
2 tsp red wine vinegar⁣
1 lemon, juiced⁣
1/2 cup olive oil⁣
Salt & pepper to taste⁣

Remove stems from the kale and chop finely. Toast breadcrumbs on the stove over medium heat. This will take about 3-4 minutes, watch it so it doesn’t burn, then remove from heat and set aside. Grate the cheese and set aside. Next, prepare the dressing. In a blender, add the basil, anchovies, garlic, mustard, red wine vinegar, lemon juice, olive oil, and salt/pepper. Blend until creamy. Taste and adjust s&p as needed. Pour the dressing over the kale, and use clean hands to massage the dressing into the kale. Add the toasted breadcrumbs and cheese and toss to coat well. ENJOY!!!⁣
