Follow @kalejunkie for more! EASY GF PEANUT CHICKEN RAMEN BAKE! If you are looking for a quick and VERY delicious dinner to get on the table tonight, this is what you need to make. Inspired by @sivanayla’s ramen bakes, this version combines my popular peanut chicken recipe made with a creamy, tangy peanut sauce tossed in chicken, broccoli and gluten-free ramen noodles, then baked in the oven—for a no fuss, delicious weeknight dinner. ⁣

Note: you do not need to use ramen noodles for this recipe. You can really use 2 cups of ANY cooked pasta and it will turn out perfect :)⁣

Makes 4-6 servings⁣
SAUCE:⁣
1 cup creamy peanut butter⁣
1/4 cup toasted sesame oil⁣
1/4 cup coconut aminos (or low sodium soy sauce)⁣
3 tb rice wine vinegar⁣
3 tb maple syrup⁣
1 tb sriracha (optional, but recommended!)⁣
4 cloves garlic, mashed⁣
2 limes, juiced⁣
1/4 cup water (if needed to thin sauce)⁣
⁣
RAMEN BAKE:⁣
5 ramen bricks (I used @lotusfoods gluten free rice ramen)⁣
2 cups broccoli florets, cut into small pieces⁣
1 pound chicken breast, cubed⁣
3 green onions, sliced thin⁣
1/4 cup salted peanuts, chopped⁣
⁣
Preheat oven to 375 degrees F. Grease a 9x11 baking dish and set aside. Prepare the sauce by combining all of the ingredients above and whisking together until smooth, then set aside. Add ramen bricks to a bowl and top with boiling hot water. Let soak until soft, then drain the water well (my ramen got soft in about 3 minutes, other brands might take 10!). Transfer the cooked ramen to the baking dish. Top with broccoli, chicken, green onion and peanuts. Pour 3/4 of the sauce on top (reserving rest for later), and gently toss to coat. Add a generous pinch of salt and pepper and bake for ~35 minutes, until chicken is cooked through (165 degrees F), then broil for 2-3 minutes to finish. Remove from oven. Plate, add remaining sauce and additional green onions/peanuts if desired. ENJOY!⁣
