CREAMY ONE-POT CHICKEN ORZO MARSALA for day 1 of my mini Valentine’s Day At Home Series, where I’m sharing easy, restaurant quality, comfort food dishes to make your love day the best one yet! This one is a BIG WINNER, 12/10 recipe that will have you craving more and more! The alcohol in the wine burns off and adds an incredible taste and it’s an inexpensive ingredient to purchase. You can also swap for any red wine of choice. ⁣

Makes 4 servings⁣
1 lb boneless, skinless chicken breast, cut into bite sized pieces⁣
2 tb olive oil⁣
1 tsp kosher salt⁣
1 tsp ground black pepper⁣
3 tb butter, salted⁣
1 large white onion, finely diced⁣
14-16 oz mushrooms of choice, sliced (I used white button but a mix is nice—it looks like a lot but they will shrink down!)⁣
4 cloves garlic, mashed⁣
1 cup orzo⁣
1 cup marsala wine (or red wine of choice)⁣
2/3 cup chicken broth⁣
2/3 cup full fat coconut milk or heavy cream (preferred)⁣
1 cup parsley, chopped, plus more for garnish⁣
⁣
Pat the chicken dry and cut into cubes. Add the olive oil to a large, deep skillet on medium-high heat. Once the pan is hot, add the cubed chicken, along with salt and pepper. Cook until almost cooked through, about 6-7 minutes. Some pink is ok, it will cook later. Remove the chicken from the skillet. In the same pan, add the butter. Once melted, add the onion, mushrooms and garlic. The pan will look full but the mushrooms will shrink. Cook for about 4-5 minutes until the onions begin to look translucent. Add the orzo and stir for about 3 minutes, toasting the orzo. Add the marsala wine and broth and bring to a boil and let cook for about 2 minutes. Reduce heat then add chicken and cover the pan and cook for about 12 minutes, until the orzo is cooked through — note, yours might take a little longer, that is OKAY!!!! Remove cover, add the coconut milk/heavy cream and parsley. Stir to coat well. Taste and adjust s&p as needed. Remove from heat. Enjoy.⁣
