A few facts about the cookies! Almonds are high in monounsaturated fatty acids and have been studied for effects on lipid and inflammatory markers—they are generally known lower LDL and increase HDL. Flaxseeds are an incredibly nutritious functional food as a source of alpha-linolenic acid, lignans, high quality protein, soluble fiber and phenolic compounds. Ginger is rich in phenolic compounds (gingerols and shogaols), which give ginger antioxidant, anti-inflammatory, antimicrobial, anticancer, cardiovascular protective, respiratory protective, and antinausea activities. And dark chocolate? A natural prebiotic for the gut!⁣

Makes 14-16 cookies⁣
1 flax “egg” (1 tb ground flax seeds + 3 tb water) - or sub one egg⁣
1 cup almond flour⁣
3/4 cup tahini (ground sesame seeds!) - you can also sub cashew butter⁣
1/4 cup molasses⁣
1/4 cup maple syrup⁣
1 tsp ginger
1 tsp vanilla extract⁣
1/2 tsp baking soda⁣
1 cup dark chocolate chips⁣

Preheat oven to 350 F. First, make the flax “egg.” In a tiny bowl, mix the ground flax and water. Let sit so it thickens. Next, in a medium bowl, mix together the almond flour, tahini, molasses, maple syrup, vanilla, flax egg, and baking soda. Add  in the chocolate chips. Form 14 cookies. Bake 9-11 minutes. ENJOY!⁣
