Follow @kalejunkie for more—I’m excited to share my ARMENIAN STUFFED BELL PEPPER DOLMAS, a very delicious and EASY recipe from my childhood. Note: I’m sure many middle eastern cultures have a similar dish, I’m sharing how we—in an Armenian household—made it, courtesy of my mom and grandma. This dish is SO FLAVORFUL, and the meat and rice cook inside the bell peppers, so all those juices are inside the peppers when you cut them open. I promise this recipe is quick, easy and you can’t mess it up! I love a big dollop of greek yogurt on top, but it’s totally optional. ENJOY!⁣

Makes 6 servings⁣
INGREDIENTS⁣
6 large red bell peppers⁣
1 1/2 pounds ground lamb (traditional) or ground beef/turkey/chicken (less traditional)⁣
3/4 cup short grain rice (uncooked)⁣
1/2 cup flat leaf parsley, finely chopped⁣
1 onion, finely chopped⁣
4 cloves garlic, mashed⁣
3 tablespoons tomato paste⁣
1 teaspoon ground cumin⁣
1/2 teaspoon cayenne pepper or paprika⁣
1 teaspoon salt⁣
1 teaspoon ground black pepper⁣
1 cup tomato sauce⁣
2 cups broth of choice⁣
Garnish: greek yogurt & parsley ⁣

INSTRUCTIONS⁣
Slice just the top part of the bell peppers off (the idea is to cut off the smallest amount possible, so that most of the bell pepper is still intact). Discard the tops. Use your fingers to gently remove the seeds from each bell pepper, and set aside.In a medium bowl, mix together the meat, rice, parsley, onion, garlic, tomato paste, cumin, cayenne/paprika, salt, and pepper. Fill each bell pepper with the meat mixture and place them upright in a large pot or dutch oven. Pour the tomato sauce over bell peppers, along with the broth. Bring to a gentle boil, then reduce heat to low, and place a large dinner plate upside down on top of the peppers, and cook for 45-60 minutes, until the bell pepper and rice are tender. Transfer to a platter and season lightly with salt and pepper. Spoon remaining sauce over dolma, and serve with salad, plain yogurt, and/or fresh pita bread.⁣
